Ode to Butter Mochi

I <3 boxers!
I think I may now be addicted to butter mochi.

My roommate made some last night and let me try some. The only thing that stopped me from asking for more is that I finished off whatever was left in the pan. SO DELICIOUS.




Edit 4/30/08: This is bad. It's so craveable that I'm still thinking about it today. I hope she makes some more this weekend! :)

I wish I could tell you exactly. I think the closest thing to its texture might be bread pudding, but I haven't had much bread pudding in order to say for sure.

Butter mochi is SO bad for you but is OH SO GOOD. If you find or adapt a healthier version that's tasty, please let me know!

Just out of curiosity, do you try the non-vegan versions before you adapt it to a vegan version? I see that eggs are a big component of the recipe, so I'm curious as to how it'll turn out.

I usually do not try non-vegan versions of food (unless I find it in a dumpster). I haven't tried this butter mochi yet, but its ingredients and appearance remind me of a filipino dessert, so that will be my texture inspiration. The eggs in this recipe would provide color, binding, and leavening, which I will try to substitute with color from carrot juice, sweet potato, or turmeric, the mochi flour will have plenty of binding properties, and leavening can be replaced by baking powder and lemon juice (any acid, at that).

I think I'll make this when my dad comes to visit for graduation (he's a big mochi fan) so I will let you know what his reaction is =)

I think my roommate may have used this recipe, but it's hard to say since there are tons of versions out there. She says she'll get me the recipe she liked best from her friend's mom, so if you're interested, I'll be sure to share if she gets it. :)
